Beetroot Burgers with Mango Salsa

Aditi Dugar’s recipe for beetroot burgers is the perfect vegetarian recipe. The beet patties are made with oats, sesame seeds and sprouts which make them filling and fibrous. The buns are light, super-fluffy and are egg-free. The mango salsa adds a spicy-sweet-salty flavour and juiciness to the burger.

Perfect for a casual dinner party, barbecue or just for a family dinner, this recipe is easy and fun to make.

Aditi Dugar is the founder of Masque in Bombay, the first female restaurateur to be featured in Asia’s 50 Best Restaurants. Masque was also rated the best restaurant in India in 2022.

Aditi honed her baking skills at Michelin star restaurants Le Gavroche and La Petite Maison in London. She then spent time in Thailand working at fine dining restuarants like Bo.lan, Tsunami and Zuma in Bangkok and and also alongside street food vendors. These experiences inspired her to launch Masque, an ingredient driven business which also includes Masque Labs, a space dedicated to investigation and experimentation into new ingredients and techniques.


Beetroot Patty  

  • 3 beetroots cut in chunks

  • 1 onion coarsely chopped

  • 2 cloves garlic

  • 1/2 cup rolled oats

  • 1 tbsp pumpkin seeds / or pumpkin seed butter

  • 1/4 cups sprouts

  • Small cube of feta cheese

  • 7-8 basil sprigs chopped

  • 1/4 tsp whole grain mustard

  • 1/4 tsp chilli flakes

  • 2 tbsp olive oil

  • 1 tbsp white and black sesame seeds

  • Paprika powder to taste

  • Salt to taste

Mango Salsa

  • 2 mangoes chopped in tiny cubes

  • 1 tomato finely chopped

  • 1 red pepper finely chopped (can substitute to green as well)

  • 1/4 cup coriander finely chopped

  • 1 large lemon - juiced

  • 2 jalapeños chopped finely

  • Salt to taste

Burger Buns

  • 4 cups whole wheat flour / all-purpose flour

  • 1 tbsp dry yeast

  • 1 1/2 cups warm water

  • 2 tbsp olive oil

  • 2 tbsp honey

  • 1 tsp salt

Serve them along with some mango salsa, hot sauce, lettuce, cheese, sliced tomato, sliced onion, whole grain mustard and ketchup. Everyone can enjoy making their own burgers to taste on the table!” - Aditi Dugar

The Beetroot Patty

  1. Prepare all your ingredients and put it inside a food processor and blend into a rough paste like mixture.

  2. Transfer the mixture to a bowl and leave in the refrigerator for about half hour. Add some black and white sesame seeds once out of the refrigerator.
    If the consistency isn’t pliable, you can add a bit of oat flour (pulverise oats in a food processor to make oat flour).

  3. Roll the mixture into balls , flatten and cook on a non stick pan with some olive oil. I usually cover it with a lid for a few minutes on each side so that it cooks really well.

The Mango Salsa

Mix everything together in a bowl and chill in the refrigerator.

Homemade Burger Buns

  1. In a large mixing bowl incorporate of the ingredients together with a spatula. Let the mixture rest and cover the bowl in cling film for about an hour.

  2. In the meantime dust some flour on the counter top.

  3. After one hour transfer the dough on the countertop and start kneading the dough really well for at least 10 minutes. The dough should be smooth and soft. Roll it into a large ball and let it again sit for about 10 mins.

  4. In the meantime get 2  baking trays ready and brush some oil on it.

  5. Now, it’s time to start rolling the dough into rounds. Rub some oil on your hands and start pulling the dough and make into round balls. Place them on the baking tray , cover and let is rest for about 30 minutes till it doubles in size.

  6. Preheat the oven , place the baking tray inside and bake buns till golden brown for about 30 minutes at 180 degrees Celsius.
